Across WA’s central and southern agricultural belt, the York Gum (Eucalyptus loxophleba) flowers between autumn and spring — an old, hardy tree with a smooth, sometimes gnarled bark, and small white blossoms that our bees seek out for one of the region’s most beloved table honeys. Bees find it. We bottle what they make. And nothing else goes in.
